Zuchizza Casserole

… Well, here goes a day to mass recipe posts! I’ve been slacking a lot recently since school consumes most of my life, so I’m putting up all my new recipes and experimentations while I have the chance!

This zucchini/pizza inspired casserole was adapted from a dusty, old, Vegetarian cookbook I found lost in the deep depths of my basement…
I made a few minor adjustments here and there, to “healthify” if a little more, while still (hoping to) keep it delicious.
1 CUP of butter?! That just sounds unappetizing in general!!!

So yeah, no 1cup of butter in this recipe…
But the deliciousness? 100% there 😉

This casserole is filled with delicious veggies, healthy fats, protein and complex carbs
Basically, everything you need in a meal.
In one platter.
Wooooo!

Ingredients
(Yeilds 6-8servings)

-3  +1/2cups of shredded zucchini
– 1 teaspoon of salt
– 3 large eggs, beaten
-1/3cup of spelt flour
-1 teaspoon of Italian herb seasoning
-2 1/2 to 3 cups of veggie or almond cheese
-3 tablespoons of coconut spread, or other buttery spread such as Earth Balance
-8 oz of thinly sliced mushrooms
– 1 can (15oz) of pizza sauce
-1/2 cup of sliced black olives
– 1 cup of chopped green bell peppers

Instructions

– Preheat oven to 350F
– Mix the shredded zucchini in a large bowl with salt; ; let stand for 15 minuets.  Drain and squeeze out as much liquid as possible. Once done, return zucchini to the bowl and add eggs, flour, seasoning, and 1/2cup of cheese. Mix lightly until everything is thoroughly combined. This will be your “crust”
– Spread the zucchini mixture in a greased casserole dish. (I used a 3-quart casserole dish). Bake the mixture for about 15 minuets.
-While mixture is baking, melt the coconut spread/butter in a frying pan over medium heat. Add your mushrooms and cook until soft, and brown. Roughly 10 minuets. When finished, drain the liquid/excess butter mixture.
-Spoon out half of the pizza sauce over zucchini mixture. Cover with mushrooms, and half of the olives. Sprinkle on peppers, and 1/2cup of cheese.
-Top with the remaining sauce, olives and cheese.
-Place whole casserole in the oven for 20 minuets, or until bubbly.

Each layer was full of delicious, soft veggies, creamy sauce and melted cheese.
It was like a giant slab of healthy veggie pizza 😀
