Hey there guys! So I’ve come to accept the fact that I have abad horrible sweet tooth… And its permanent. I also love baking. Baking solves all problems, right? When in doubt, bake something.
…… Then bring it to me.
Because I love baked goods.
So last night I whipped up a batch of these delicious, clean, healthy vanilla muffins. I was actually surprised they came out so good! There aren’t many ingredients, and I tried to keep the ingredients basic so that anyone can make them on hand, without a grocery store visit.
I also discovered crunchy almond butter for the first time. My father brought some home when he made a quick run to Trader Joe’s. It isn’t often we shop there, since it isn’t exactly close.
I scooped out a tablespoon, took a lick and thought:
“Ew. What is this. This is gross. Wheres my PB?
Omg no flavor. What is this.”
Then I proceeded to take another lick… and then another.
…. And then I finished the tablespoon.
Screw you Trader Joe’s, I’m now addicted to almond butter.
I get side-tracked a lot, don’t I? Back to the muffins recipe..
(makes 8 muffins)
- 1/2 a cup of unsweetened apple sauce
- 1 cup of whole wheat pastry flour (Regular whole wheat would work fine too)
- 1 cup of baking stevia (I used Pure Via)
- 1 tablespoon of pure vanilla extract
- 1 teaspoon of baking powder
- 2 egg whites.
…. And thats it! No milk, fancy flours, or strange ingredients. I also drizzled some sugar free vanilla syrup into the batter too, for good measure.
Preheat your oven to 350 degrees, and bake them in a muffin tin for about 15-20mins. It took me 17 exactly. I sprinkled my muffins with a bit of shredded coconut before putting them in for decoration. They ended up becoming toasted and added a nice bit of flavor to the muffins.
I usually never ever use cupcake tins/paper cups. I usually just spray the muffin tin with non stick spray, and start baking. DO NOT, I repeat, do not use paper baking cups. They ended up sticking and morphing with my muffins and I had to rip them up to get them apart :3
Just thought I’d throw you guys a heads-up.
These muffins come out to about 50 calories or so per muffin, 9 net cars, and almost 2g of protein, without toppings.
They made a great post workout for me topped with a bit of my new addiction, almond butter, and a protein shake.
